double chocolate donuts.

halloween edition!

donuts: (makes 12)
3/4 cup whole wheat flour
1/2 cup brown sugar
1/3 cup cocoa powder
1/4 cup mini chocolate chips
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 cup unsweetened applesauce
1 tablespoon coconut oil (melted)
1 egg plus 1 egg white
1 teaspoon vanilla extract
1/2 cup chocolate almond/soy milk

mix flour, sugar, baking soda, baking powder, cinnamon and cocoa powder in a large bowl
in a separate smaller bowl, mix applesauce, chocolate almond/soy milk, egg and egg white and vanilla extract and blend together really well
combine the wet ingredients into the dry ingredients in 2-3 increments until everything is smooth
mix in melted coconut oil and then fold in chocolate chips

bake at 350 degrees in a donut pan (filling almost to the top) for 8-10 minutes until donuts look like they have risen and knife comes out clean

let cool on a cooling rack

chocolate glaze:
1/3 cup chocolate chips
2 tablespoons fat free half and half
2 tablespoons powdered sugar

in a microwave safe bowl, combine half and half and chocolate chips
heat in microwave for 30 second intervals, mixing every time until melted
add powdered sugar and let cool until not as watery

once cooled, to glaze your donuts, dip them in your glaze upside down and put onto a large cookie sheet
after i was all done with one batch, i added sprinkles then i stuck them in the freezer for about 5 minutes so the glaze hardened a bit and did not run off every donut
note: i only added the sprinkles when the glaze was not hardened so they would stick! if you’re going to add on any other decorations involving more icing, you can do that after they go into the freezer
