chocolate sea salt superfood muffins.

Purely Elizabeth has a new probiotic granola out on the shelves!  It’s chocolate sea salt flavor – YUM!  I made some muffins using Kodiak Cakes superfood pancake and waffle mix, and topped them off with this chocolate sea salt granola – perfection!!! The best thing is… they’re healthy 🙂


  • 1 cup Kodiak Cakes superfoods pancake and waffle mix
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons cocoa powder
  • 1 egg
  • 2/3 cup unsweetened almond milk
  • 1/3 cup earth balance butter spread, melted
  • 1 teaspoon vanilla extract


  • preheat oven to 350 degrees
  • in a large bowl, mix together Kodiak Cakes mix, brown sugar, baking powder, baking soda, and cocoa powder
  • in a separate bowl, add almond milk, egg, melted butter, and vanilla extract
  • whisk wet ingredients together until smooth
  • add dry ingredients to wet ingredients in about 3 increments, whisking together after each addition
  • add cupcake liners to a cupcake pan
  • fill each one 3/4 full, and add about 1 tablespoons of granola on top
  • bake for 15-18 minutes, or until toothpick or knife comes out clean
  • let cool (or don’t) and enjoy!
